According to the San Gabriel Valley Tribune, Susan Kilgour, director of food services for the Bonita Unified School District, says the students love salads. This may sound odd for young children to like such healthy options, but when Kilgour became chef, she added chicken and taco salads to the school menus last year, and students couldn’t get enough of them.
But that wasn’t the only healthy option she brought. Kilgour has also introduced many other “made from scratch” items, such as teriyaki chicken bowls, spaghetti with meat sauce, and sub sandwiches to the school menus.
Kilgour explains when she arrived, she found that the school cafeterias didn’t really actually cook anything. Instead, they favored pre-packaged, processed food. “They were serving only things that were easy,” she said.
That didn’t sit well with Kilgour, who attended culinary school and has worked in the food service industry for 12 years in many different capacities, including restaurant management and catering. She said she’s planning to up the salad selection, adding chicken Caesar and Cobb. In addition, she wants to introduce salad bars to every campus. “This is the first year we have them at all of the schools,” she states.
